I haven't tried this yet, but sounds easy.
ICEBOX CAKE
Old fashioned icebox cakes are making a comeback. Try making this easy no cook recipe with different flavors of pudding mix and frosting for a new taste sensation.

Prep Time: 20 minutes

Total Time: 20 minutes

Ingredients:
•16 oz. pkg. graham crackers
•2 (3.5 oz.) pkgs. instant vanilla pudding mix
•3 cups whole milk
•8 oz. container frozen whipped topping, thawed
•16 oz. container chocolate frosting

Preparation:

Blend the pudding mix, whipped topping, and milk in a medium sized bowl. Stir until well blended.
Place one single layer of graham crackers in the bottom of a 9x13" baking pan. Do not crumble, but leave the crackers whole. You can fill in gaps with crackers broken in half if necessary. Spoon half of the pudding mixture over the crackers and spread evenly. Repeat with another layer of crackers and remaining pudding mixture. Top with another layer of graham crackers. Cover the pan with plastic wrap and chill in the refrigerator for 30 minutes to set up a bit.

Stir the frosting and spread it over the whole cake up to the edges of pan. Cover and refrigerate cake for at least 4 hours before serving. 14 servings

Personal hint, I always whip canned frosting in my mixer. It almost doubles in volume, makes it light and fluffy and easier to spread

The most simple, refreshing, almost very healthy salad is called (depending on which dressing you use)

CTO SALAD

Depending n how many people you are having (this salad is very addicting)
Four 4 adults I use:

1 or 1 1/2 Super Large peeled cucumber and sliced to medium slices and quatered or halved into bite size chuncks
3 Large Tomatoes, diced in bite size chunls (very ripe and juicy)
1 small or medium red onion, chopped (depending on how much onion you like)
2 dashes of garlic powder
salt and pepper to taste
Your favorite V/O, Italian, or balsamic vinegarette ( 1 small bottle)

Mix together in a titghtly covered bowl and refridgerate till ready for use (the longer this sets, the better it tastes, I've even made it the day before needed and it was delicous. I've had this with almost everything from grilled Italian Sausage sandwiches to with any meal and even AS a meal in itself with some nice warm breadsticks, garlic bead or Italian bead.

Enjoy!!!
