Fruit Smoothie:

2 cup bananas, broken into chunks


1 cup cubed papaya (optional)


1 cup cubed fresh pineapple


1 cup cubed honeydew


1 cup seedless grapes (optional)


3 cubes ice cubes (optional)


2 (6 ounce) containers fruit flavored yogurt


1/2 cup orange juice, or as needed


Directions


1.Place bananas, papaya, pineapple, honeydew, grapes, ice cubes, and yogurt into the bowl of a blender. Pour in orange juice. Cover and puree until smooth, adding additional orange juice if needed to achieve desired consistency.

Hawaiian Dream Cake

1 package yellow cake mix
1 (20 oz.) can crushed pineapple, drained, reserve juice
1 8-ounce package cream cheese
1 (3-oz.) pkg. instant vanilla pudding
1 cup cold milk
1 (9-ounce) container cool whip
Nuts and coconut

Prepare cake mix according to package directions, using the reserved pineapple juice and water for the liquid called for in the directions. Bake at 350° F. for about 35 minutes in a greased and floured 15 x 10 x 1 inch jelly roll (I used a 9-/12 x 13 pan). Cool in pan, set aside.
In a large bowl blend together cream cheese, pudding mix and milk until smooth. Fold in drained pineapple and spread over top of cake. Cover with whipped topping and sprinkle with nuts and coconut. Refrigerate.

Grilled steak and papaya salad

Ingredients
4 cloves garlic, chopped
1 Thai bird chile, chopped
2 tablespoons soy sauce
1 tablespoon fresh lime juice
2 to 3 tablespoons honey
1/4 cup peanut oil
1 1/2 pounds beef tenderloin
Salt and freshly ground pepper
Papaya Dressing, recipe follows
Directions
Place garlic, chile, soy sauce, lime juice, honey, and oil in a mini food processor and process until smooth. Place beef in a small baking dish, pour the marinade over, and turn to coat. Cover and marinate in the refrigerator for 1 hour.

Preheat the grill to medium-high. Remove the beef from the marinade and season it with salt and pepper. Grill meat until charred and cooked to medium-rare doneness, about 10 to 12 minutes. Remove from grill and let rest 10 minutes before slicing into 1/4-inch thick slices.

Papaya Dressing:

1 shallot, peeled and finely chopped
2 Thai bird chiles, finely chopped
1 tablespoon chopped fresh mint
1/2 cup rice wine vinegar
2 teaspoons sugar
2 tablespoons fish sauce
8 large red romaine lettuce leaves, cut into strips
1 bunch watercress
1 large green papaya, peeled and thinly shredded
2 carrots, peeled and thinly shredded
1/4 cup chopped roasted peanuts, for garnish
Chopped cilantro, for garnish
In a small bowl, whisk together the shallot, chiles, mint, vinegar, sugar, and fish sauce. Set aside. In another bowl, toss the lettuce leaves and watercress together and then arrange the mixture on a platter.

Combine the papaya and carrots in a medium bowl. Evenly distribute the papaya mixture over the lettuce. Drizzle with a few tablespoons of the dressing. Arrange the steak on top and drizzle steak with some more dressing. Garnish with chopped peanuts and cilantro.

I'm drooling reading all the recipes,lol

Here are a few favorites to enjoy

Bacon Wrapped Chicken
So simple!
preheat oven to 350 degrees
1 lb of your favorite bacon (I like using thick sliced)
4-5 chicken breasts (i have used frozen breasts and they work just fine!)
shredded cheddar cheese (as much as you would like to add)

All you do is wrap the bacon around the chicken starting at the top- I usually use 3-4 pieces per breast if they are big

Place the chicken in a casserole dish and cook for about an hour.
I tend to flip the chicken over after it starts to crisp up, that way both sides are done the way I like it,lol and then flip back towards the end and i raise the temp to about 400 degree to crisp the bacon up and that is when you want to add any shredded cheese.

This goes great with four cheese mashed potatoes (heck i even grab the instant,lol)


This one is so so good, I'm always asked to make it whenever I go to a family/friend get together

Cucumber Salad with Sour Cream and Dill

Ingredients

1 large cucumber (I used 3 very small ones)
2 tsp. kosher or sea salt
1 tblsp. light sour cream
1 finely chopped green onion
1 tsp. chopped fresh dill
1 tsp. vinegar
Pinch of sugar
Pinch of salt and pepper
Instructions

Peel the cucumber(s) and cut into thin slices.
Place the cucumber slices in a colander and sprinkle with the salt. Put the colander on a plate to catch any juices that drain from the cucumbers. Set aside for one hour.
Mix together the remaining ingredients and place in the refrigerator while the cucumbers are draining.
When ready to serve, rinse the cucumbers and pat dry with paper towels.
Toss cucumbers with the dressing and serve.



And this one my brother surprised me with while he was staying here for a few weeks. He said not to share it, this is his secret recipe to impress dates (and he said it usually will land him a hole in one if you know what I mean lol)

Lucky Date Cake

All you need is 1 cake mix of your choice and 1 can of soda
Thats it!
1 cake mix
1 12 oz can of soda
your choice of frosting

mix the cake mix and the soda, pour into a microwave safe dish (he used one of my plastic mixing bowls) and microwave for approx 12-15 minutes (times vary depending on your microwave watts)

When it beeps, wait a few minutes then remove the cake (he dumped the bowl upside down onto a plate!)
After it cools, frost the cake using your choice of icing

It is fun to try different flavors, we had white cake mix and orange soda, devils food cake mix with diet soda

Peach Cobbler Recipe
Use ripe, sweet, flavorful, firm peaches. The cobbler will only be as good as the fruit going into it, so taste test your fruit first. The best peaches to use with this recipe are yellow peaches. White peaches, although delicious on their own, are too delicate and don't hold their flavor as well as the yellow when cooked.
Preparation and cooking time: 1 1/2 hours.


INGREDIENTS
4 lbs of ripe yellow peaches, peeled, pitted, and sliced into 1/2 inch thick wedges
1 cup sugar, divided 2/3 cup and 1/3 cup
1/2 cup quick cooking (instant) tapioca
1 teaspoon grated lemon peel
1 1/2 tablespoons lemon juice
2 teaspoons vanilla
2 cups all purpose flour
1 1/4 teaspoons baking powder
1/2 teaspoon ground nutmeg
3/4 cup (6 oz) butter, cut into 1/2 inch chunks
2/3 cup whipping cream

METHOD

1 In a large bowl, mix peaches, 2/3 cup sugar, and the tapioca, lemon peel, lemon juice, and vanilla. Let stand at least 15 minutes or up to 30 minutes to soften the tapioca, stirring several

2 In another bowl, combine flour with remaining 1/3 cup sugar, the baking powder, and nutmeg. With a pastry blender or your fingers, incorporate butter into flour mixture until mixture resembles coarse crumbs. Add cream and stir just until dough holds together.

3 In a buttered shallow 2 1/2 to 3 quart baking dish, spread fruit level. Using your hands, crumble dough evenly over fruit.

4 Bake in 350°F oven until fruit mixture bubbles in center and topping is golden brown, 50-60 minutes.

Delicious with vanilla ice cream or whipped cream.
Yield: Serves 8.

Simple Sangria

The name is derived from sangre, Spanish for "blood," and this ruby-red concoction is truly the essence of any proper fiesta. Stud your pitcher with whatever fruits look good at the market, making sure to load up on sangria's signature citrus. We love merlot or Shiraz, but you can create a lighter punch with a crisp white or rosé. No need to spend a bundle — an inexpensive bottle will do the trick. Salud
Ingredients


1 bottle(s) (1.5 liters) red wine
1 1/2 cup(s) fresh orange juice
1/3 cup(s) brandy
1/3 cup(s) sugar
2 (nectarines) pitted and cut into wedges
1 orange, cut in half then sliced
1 lemon, sliced
1 (Kirby (pickling) cucumber) sliced
3 cup(s) seltzer or club soda, chilled
Ice cubes

Directions
1.In 3- to 4-quart pitcher, combine wine, orange juice, brandy, and sugar; stir until sugar dissolves.
2.Stir in fruit and cucumber. Cover and refrigerate until well chilled, at least 3 hours or overnight.
3.To serve, stir seltzer into pitcher. Fill glasses with ice and pour sangria.

Old fashioned icebox cakes are making a comeback. Try making this easy no cook recipe with different flavors of pudding mix and frosting for a new taste sensation.

Prep Time: 20 minutes

•2 (3.5 oz.) pkgs. instant vanilla pudding mix

Spoon half of the pudding mixture over the crackers and spread evenly. Repeat with another layer of crackers and remaining pudding mixture. Top with another layer of graham crackers. Cover the pan with plastic wrap and chill in the refrigerator for 30 minutes to set up a bit.

Stir the frosting and spread it over the whole cake up to the edges of pan. Cover and refrigerate cake for at least 4 hours before serving. 14 servings

Personal hint, I always whip canned frosting in my mixer. It almost doubles in volume, makes it light and fluffy and easier to spread
