I have two favs. First is fruit salad. The making of the fruit salad is what makes it special. When my Mom and Dad were living it was a Thanksgiving tradition and the one food that the kids got to help with. So all the little and big kids got to help make the fruit salad. More like making a memory instead of a food.
And mincemeat pie. My fav anytime.

Don't eat meat, but love the dressing for the bird. This year I am making a combination of cornbread and kashi dressing with mushrooms and dried cranberries, and lots of other yummy goodies. Also love the collard greens, mac and cheese, candied yams. This year, I'm making myself spinach and green onion quiche as well. I'll cut down on the cholesterol later on.
Spinach and Green Onion Quiche
2 9-inch pastry shells
4 eggs beaten
1 12-ounce can evaporated milk
1 teaspoon dry mustard
1 teaspoon salt
a slight dash of cayenne pepper
Beat all of the above together, then add:
1 10-ounce pkg frozen chopped spinach, thawed and drained
1 bunch green onions, sliced into 1/4 inch slices, roots removed
1/2 pound Swiss cheese, grated
1/2 pound Cheddar cheese, grated
Heat oven to 350 degrees, with the rack placed in the center.
Add the spinach, green onions and grated cheeses to the egg mixture. Stir until well-blended.
Pour half of the mixture into each prepared crust. Bake at 350 degrees for about one hour, or until center of quiche is firm and quiche is well-browned. Serve hot with a salad and rolls for a complete meal. Can also be used for a nice breakfast entree. Serves 6 to 12 depending on appetites and accompanying dishes.
Note: Other veggies can be substituted for the spinach. You can also use meat if you like.

mmmm my mom make a cinnimon apple salad with walnuts and celerythat we cover in cool whip.
She puts red hot in the boiling water and uses that in cherry jello wow I could eat the whole thing, funny thing is we only eat it in thanksgiving.
By the way I hope you all have a wonderful day, I am cooking for 20, but thats okay moms bringing the jello.

I was never one to watch my mother cook on Thanksgiving Day but I did manage to mimic her wonderful gravy and coleslaw - so here's to you Mom. I will be enjoying every bite.
