Ingredients
Crust:
1 3/4 cups graham cracker crumbs
3 tablespoons light brown sugar
1/2 teaspoon ground cinnamon
1 stick melted salted butter

Filling:
3 (8-ounce) packages cream cheese, at room temperature
1 (15-ounce) can pureed pumpkin
3 eggs plus 1 egg yolk
1/4 cup sour cream
1 1/2 cups sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon fresh ground nutmeg
1/8 teaspoon ground cloves
Preheat oven to 350 degrees F.


For crust:

In medium bowl, combine crumbs, sugar and cinnamon. Add melted butter. Press down flat into a 9-inch springform pan. Set aside.


For filling:

Beat cream cheese until smooth. Add pumpkin puree, eggs, egg yolk, sour cream, sugar and the spices. Add flour and vanilla. Beat together until well combined.


Pour into crust. Spread out evenly and place in oven for 1 hour. Remove from the oven and let sit for 15 minutes. Cover with plastic wrap and refrigerate for 4 hours.

Cranberry Relish Squares

Tart and tangy whole berry cranberry sauce and citrusy mandarin oranges co-star as the perfect tasty pairing in our luscious, colorful Cranberry Relish Squares that'll dress up your holiday bird or add pizzazz to an anytime weeknight meal.

Serves: 16

Chilling Time: 4 hr

What You'll Need:
•3 (4-serving-size) packages cranberry-flavored gelatin
•2 cups boiling water
•1 (14-ounce) can whole-berry cranberry sauce
•1 cup chopped pecans
•1 (11-ounce) can mandarin oranges, drained
What To Do:
1.Place gelatin in a medium bowl and add boiling water; stir to dissolve gelatin. Add cranberry sauce, pecans, and oranges; mix well. Pour into an 8-inch square baking dish.

2.Cover and chill at least 4 hours, or until set. Cut into squares.

(I made this today for our Thanksgiving Dinner tomorrow, I hope it's as good as it sounds)

SWEETLIPS SWEET POTATO CHEESECAKE
(an original recipe by Cora E)

CRUST:

3/4 cup Graham wafer crumbs
3 tablespoons soft or melted butter
1/4 teaspoon Cinnamon
1/4 teaspoon Nutmeg

FILLING:

3-8 oz pkgs Cream Cheese
1 cup Sugar
4 large Eggs, separated, set aside egg yolks, beat egg whites until stiff
1 cup cooked Yams OR Sweet Potatoes, mashed
1 teaspoon Nutmeg
2 teaspoons vanilla

TOPPING:

1-1/2 cups dairy sour cream
3 Tablespoons granulated sugar
1 teaspoon vanilla


In a small bowl, combine graham wafers, spices and melted butter. Mix together and press into 8x8" pan lined with tinfoil.

Place cream cheese in large mixing bowl and beat with an electric mixer until fluffy. Beat in sugar then eggs yolks. Blend dry ingredients together and beat into cream cheese mixture. Beat in Yams or Sweet Potatoes. Gently stir in the beaten egg whitesPour mixture into prepared and bake at 350 F about 1 hour or until a knife inserted in the center comes out almost clean and the top is browned. Cool on a wire rack for one hour.

To make topping, thoroughly blend together the sour cream, granulated sugar and vanilla in a small bowl until smooth. Pour and spread the topping on top of the cooled cheesecake and refrigerate for several hours or overnight. Cheesecake is best served after it has been in the refrigerator for 24 hours or at least overnight.

PEACH DELIGHT

1/2 cup margarine, softened
1 cup flour
1 T. sugar
1/4 cup chopped pecans

Second layer:
1 cup sugar
1 (8-oz.) cream cheese
1 (9-oz.) Cool Whip
3 cups fresh peaches, sliced

Third layer:
1 cup sugar
1 (3-oz.) pkg. peach Jell-O
4 T. cornstarch
1 1/2 cups water

Mix first set of ingredients above and spread in 9x13-inch dish. Bake 20 minutes at 350 degrees. Cool before adding second layer.

Second layer:
Cream together sugar and cream cheese. Fold in Cool Whip. spread mixture over crust. Top with sliced peaches.

Third layer:
Combine sugar, cornstarch and water. Cook until thick. Stir in peach Jell-O until thoroughly blended. Cool. Spoon glaze over peaches.

Whole Wheat Chocolate Chip Cookies

3/4 cup granulated Sugar
3/4 cup Packed Brown Sugar
1 Cup Butter or margarine Softened
1 teaspoon Vanilla
1 egg
2 cups gold Medal Whole wheat Flour
1 teaspoon baking soda
1/2 teaspoon salt
1 package (12oz.) semisweet chocolate chips (2 Cups)


(1) Heat Oven to 350 In A large bowl stir Sugar ,butter ,vanilla and egg untill well blended. stir in Flour ,baking soda,and salt ( dough will be stiff). Stir in Chocolate chips .
(2) On ungreased cookie sheets , drop dough by round tablespoonfuls about 2 inches apart .
(3) Bake 8 to 10 minutes or untill light brown ( centers will be soft). Cool slightly ; remove from cookie sheets to cooling racks .

I love eggnog so I'm going to try this for Christmas

Eggnog Fudge


Ingredients
•24 ounces white chocolate chips
•1 can (14 ounces) sweetened condensed milk
•2 cups walnuts, chopped
•Sprinkle of nutmeg (1/8 to 1/4 teaspoon)
Instructions
1.Line an 8x8 inch or 9x9 inch pan with parchment paper or foil that extends over the edges of the pan. I used a pan measuring 7x11 inches in the video.

2.Toast the walnuts for 2 to 3 minutes in a large dry skillet over a medium low heat, then remove them from the pan and sprinkle them with nutmeg.

3. Melt the white chocolate and sweetened condensed milk in a large skillet over a low heat. Stir the mixture until it is smooth then turn off the heat and stir in the nutmeg sprinkled walnuts.

4. Empty the mixture into your prepared pan and spread it out evenly with the back of a spoon. Sprinkle the top lightly with more nutmeg then chill for a few hours before removing the fudge from the pan by lifting the foil or parchment overhang. Cut it into squares and serve.
Notes
If you’d like to add some bourbon or rum to the recipe, stir 1 to 2 tablespoons into the sweetened condensed milk just before pouring it over the white chocolate but be sure that you are using a gluten free spirit if you are following a gluten free diet. If you find the nutmeg too strong of a flavor for your palate try using pumpkin pie spice instead
